After a few upheavals, life settled down again and I happily tucked into my routine - which includes writing and, best of all, hitting the farmer's markets to discover the treasures new and exciting. And oh - I found one.
Sunday I drove down the street to my local market to get some 'of bison, eggs, rib eye and a cow's heart for cats. Upon leaving, I decided to pop Table Monforte. They make gorgeous sheep's milk cheeses and yogurt, which does not seem to worry my tum sensitive.
As I was fingering a wonderful block of cheddar garlic scape, a wedge of skin just caught my attention. White, creamy but firm, lightly speckled with herbs.
"What's this one?" I asked.
"That's Halloumi," said Nice Cheese Lady.
"What's halloumi?
"It 'a cheese greek," she said. "You fry it."
You know in movies when the boy sees the girl for the first time, like when you walk into the classroom or in a restaurant or office, and suddenly everything is in slow motion and reverses the hair and everything is shiny and beautiful and "Dreamweaver", begins to play? Well what happened to me, but with cheese.
Nice Cheese Lady was waxing poetic halloumi originating Cyprus and how it does not melt with heat, because the curd is cooked in whey at high temperatures and the protein structures are altered, or something to that effect, but all I could hear (apart "Dreamweaver") was my belly singing to me in a relaxed, lovers whisper
You fry it.
Cheese fried.
This is the cheese you can fry.
Good 'fry' rhymes with 'buy', and I'm not one to ignore meaningful coincidences. I plunked down five dollars and flew home, beaten.
According to "the rules", you should wait three days before calling a crushing so as not to appear desperate. I chose to use this tactic with my halloumi. If I took it home, ripped open and fried immediately, what would you think me? Would be for me? I doubted that. My halloumi sitting and wringing her hands ( "Will you cook me?" She is gonna cook me, right? ") Until this evening.
I was going to fry my new love in olive oil to make him feel more at ease, being greek and all, but not a drop in the house. So, I used a bit 'of lard. ( "Ooooh, you're fried in lard CHEESE!" Yelled my belly, delighted by the decadence of the whole rebel). Three slices, a few minutes per side, then a plate and simply but elegantly dressed with a few leaves of mint, sea salt and lemon juice doosh.
It 'was a day to dream. My halloumi proved be just like human love in my life: crisp on the outside firm, yet tender inside, and leave a little 'squeak when bitten. (yes -- my fella fits this description, but this is a whole other blog.)
Halloumi is beautiful in itself, simply dressed like I did -- was almost like a dessert. But you can also grill on a skewer, kebab-style, or cube, fry and serve as a slice in salads or soups. Has a neutral flavor, so I guess that would take other herbs and spices very well. You can also get packed in brine, which gives it a salty flavor and I imagine it helps to last longer refrigerate. Not that it takes around a long time. It 'too delicious and versatile seating there. If my gut approved, can begin to eat, oh I do not know, as every day every meal for the rest of my natural life. I know it is still early in the relationship, but when I fall in love, I fall hard.
